One of the main reasons for visiting Puebla has to be for the food. There are lots of interesting sounding regional specialities on offer here including escamoles (ant larvae), gusanos de maguey (worms that live on the agave plant) & chapulines (dried grasshoppers fried in chilli powder & lime).
Puebla is also the home of Mexico's most famous dish, mole poblano. I get to try this as part of my enchilidas with three moles. The other moles I try are a green one made with tomatillos & green chillies and a red one made with red chillies & cinnamon. The mole poblano is my favourite. It's made with chocolate, chillies, almonds & raisins & has a lovely rich texture & flavour.
Paul opts for another Poblano favourite, Chiles en nogada which is comprised of poblano chillies stuffes with a mixture of dried fruit & meat & covered with a creamy walnut sauce & pomegranate seeds. The red, white & green colours are supposed to represent the colours of the Mexican flag.

What amazing food, Kerry and Paul. I had never realised that Mexico had such interesting cuisine. What are the flags hanging in the first 2 pictures?

I'm not sure what the flags were. They were made of coloured crepe paper and were hung all over the restaurant. I don't know if they have any special significance but I thought they looked pretty so I'd take a snap of them.
